Fruits of the Year Recipe
In keeping with the Afghan New Year, here is an absolutely delicious recipe that the
Afghan’s call the “Fruits of the New Year”.
1/2 cup dried unsulphured apricots
1/2 cup monukka raisins
1/2 cup golden raisins
1/4 cup currants or mulberries (the Afghans use a fruit of the cactus)
1/4 cup unsalted, raw almonds
1/4 cup raw walnuts
1/8 cup apricot kernels (optional)
You’ll need two bowls. Put the nuts in one bowl and the fruits in the other. Use double the amount of water in the two bowls to cover the nuts and fruits. Soak for three days in the refrigerator during this time both nuts and fruits will expand. Pour the water out of the nuts. Rinse and remove their skins which will come off easily. Add the nuts to the soaked fruits and enjoy. For extra added delight, put a dollop of whipped cream on each serving.
